Tummy Tuesday : Spaghetti Squash, the easy way

Yay! It’s Tummy Tuesday again. Add your link at the bottom of the post to the blog hop if you’ve got a post or pic that’s food related.



Spaghetti Squash is a great way to avoid carbs and still getting your Italian food fix.  It’s low calorie and you don’t even need a pan.

1. Cut a spaghetti squash in half. Each half serves 2

2. Scoop out seeds

3. Add a little water, garlic, herbs, sliced then veggies or meat in the center. Don’t add a lot because you’ll be adding spaghetti sauce in this space later.

4. Wrap and nuke for 8 minutes

5. Unwrap, add spaghetti sauce in center

6. Rewrap

7. Nuke for another 2 minutes

9. Using a fork, pull the spaghetti strands from  the sides and bottom into the sauce.  It’s pretty cool how the squash sides are spaghetti strands.

10. That’s it! You have a natural serving dish too!

 

Each squash half serves 2. I use the word “nuke” for “microwave” The calories depends on your spaghetti sauce so if you’re using a jar, check the calorie count and sugar. Spaghetti sauce doesn’t need sugar for flavor so look for one without sugar or sugar substitutes. I wouldn’t use spaghetti sauce from a tin because then you’ll need sugar to take out the tinny taste.

I just did garlic and herbs this time but you can add a little thin sliced veggies or meat. They’ll be steam cooked in the 8 minutes. Don’t add a lot of veggies or meat because you’re going to be adding the sauce and stirring it all together. If you’ve got too much stuff in the middle, you’ll be making a big mess, guaranteed.

  1. I throw it in the oven for 50 minutes at 460 degrees! No water, no nuking!
    Then toss it in a batch of Alfredo sauce! Stick O butter, cup of heavy cream, and half a pound of shredded Parmesan! Follow with a tab of Lipitor and sixteen miles on the treadmill! EPIC!

    1. laughing, sounds awesome. Still, I’m thinking the treadmill is a myth. I’ll have to try it sometime when I’m not afraid of a pound or five.

    1. Eating healthy is still tough for me sometimes, often two steps forward and one step back. I’m not surprised you’ve had it before. It sounds like you’ve had a healthy eating style for a while now.

  2. I love spaghetti squash…it’s great you included this, because people trying to eat healthy think they can’t have spaghettii, but this is a great alternative.

    1. I liked it a lot. I like that it’s a little crunchy (probably because I’m missing the crunch that fried foods used to give me ). How do you cook spaghetti squash?

      1. I slice the squash in half and put it flat side down on a cookie sheet. Place the cookie sheet on the oven rack (350 degrees) and pour a small amount of water onto the pan to steam the squash. When it comes out of the oven I “shred” the spaghetti out of it with a fork. I generally use tomato sauce and add peppers, onions and mushrooms as the vegetables. I love mushrooms. If my husband is home, which is rare, I will add ground beef, but I do not eat meat if I am alone.

        1. That sounds really good. Peppers, onions and mushrooms are a great combo. I like using the oven in the winter as it feels like more aromas come out of it than if you simply nuke something (summer time too hot to add heat here, lol)
