I love mini desserts.  They are cute and the serving sizes are tiny so I can get a taste of my favorite flavors like chocolates without worrying that I finished of a day’s calorie account in one serving.

Just Mini Desserts: Quick and Easy Mini Dessert Recipes

I also scored this at the thrift store:  Robert Zollweg’s Just Mini Desserts: Quick and Easy Mini Dessert Recipes. I love the Chocolate Raspberry Tart served up in a shooter. He also gives new life to jello that looked like a lot of fun. To make the tart, crush 9 chocolate graham crackers and mix the crumbs with 3T honey and butter. You can skip the butter if you add more honey. Divide it equally among 12 dishes (glasses, shooters, whatever) and press firmly on it. Next bring 2C whipping cream to a boil, quickly reduce the heat to low/simmer and stir for 5 minutes.  Add 12oz dark chocolate or semi-sweet chocolate chips, 1/4C sugar, 2T unsweetened coca powder, stirring until they are melted into the whipping cream. Pour into the dishes over the crust you made and chill for 1-2 hours until firm.  Decorate with fresh raspberries or raspberry jam.  That’s it. Easy peasy. My kind of dessert. Problem is I have 12 of them …..
